Here’s a delicious quick chicken sausage recipe for the grill!
This one is going to be a keeper in our house as not only did it taste great but it was so easy and used just a few ingredients, 6 to be exact and that includes the olive oil! With summer squash being in season right now, this easy recipe is a great one to make part of our weeknight rotation. This is also a great recipe for those busy weeknights when you need to keep dinner recipes simple. The pre-cooked sausage makes this extra quick but you could use the non-cooked variety but just be sure to adjust the cooking time.

Here is the quick and simple recipe for you, just in time for dinner tonight!
1 package of cooked chicken sausage, sliced into 1 inch pieces (we love Al Fresco All Natural Chicken Sausage and used the Roasted Garlic variety for this recipe)
2 summer squash, sliced into 1 inch pieces
2 zucchini, sliced into 1 inch pieces
1 tbs olive oil
2 tbs capers
1/4 cup fresh parsley, roughly chopped (about small handful). You can also use any other fresh herbs such as basil or cilantro or a combo of all 3!
Heat grill on med heat. Cook sausage until browned on both sides, about 8 to 10 minutes. Place both summer squash and zucchini in a serving dish and add olive oil. Season with salt and pepper and toss to coat. Place veggies in a grill basket and cook on grill with sausage until browned and tender. Return sausage and veggies to serving dish, and combine with capers and parsley. Serve it with a simple salad and you have dinner done in 30 minutes!
