This is an easy, quick, healthy side dish that is full of flavor and nutrients! Here are the ingredients you will need for this delicious recipe:
1 medium eggplant
¼ cup extra virgin olive oil
3 Tbsp raw agave nectar or honey
2 Tbsp soy sauce (or coconut aminos if need gluten free version)
1 Tbsp filtered water
2 tsp chipotle chile powder
Start by slicing a fresh eggplant into ¼ to ½ inch thick pieces. Then cut each slice into 3 or 4 strips.
In a small bowl, whisk together the olive oil, agave nectar, soy sauce (or coconut aminos), water, and chili powder. Pour over eggplant strips and gently toss to coat the slices evenly. Let marinate at room temperature for about 20-30 minutes.
Drain the excess liquid from the pan and put eggplant slices on baking sheet or shallow roasting pan.
Broil on high for 10 minutes, then turn and broil on high for another 8-10 minutes, or until crispy on the outside, tender on the inside (similar to the consistency of French fries!)
