Need a quick idea for dinner tonight or this weekend? This is one of my favorite and super quick dinners for getting a healthy meal on the table FAST with very little prep or fuss. Sounds like something you need?
It starts with a couple flatbreads (we use the Stonefire brand-2 large ones are enough for my family of 5) and then just top with your favorite veggies and of course some cheese. There really is not a true recipe for these as it is essentially anything goes. You can get creative, your kids can participate, and it takes well under 30 minutes to get an easy dinner on the table.
The version shown below starts with some mushrooms sauteed in a bit of olive oil and fresh garlic. Place the mushrooms on the flatbread, along with all the liquid from the pan, and then top with sliced tomatoes, baby spinach, and a heavy dose of shredded mozzarella cheese. Bake in a 350 degree oven for about 10 minutes until the cheese is melted and the breads are starting to brown. Let cool for about 5 minutes, slice and serve with a fruit or bean salad, for a fast and easy dinner!
Some of our other favorite variations:
- Smoked Salmon, Cream Cheese and Capers: Spread flat bread with cream cheese, top with some smoked salmon, sliced red onions, capers, and a drizzle of lemon juice. (This is one of my daughter’s favorites!)
- Asian Veggie Flatbread: In a small skillet, saute chopped broccoli in 2 tsp minced garlic, 1 tsp sesame oil and 2 tbs of soy sauce for about 5 minutes. Top flatbread with sliced red peppers and shredded carrots. Add broccoli along with sauce from pan. Bake at 350 for 10 minutes.
And one of my kids favorites:
- Simple Cheese and Tomato: top flatbread with sliced tomatoes, sprinkle with salt and pepper. Add lots and lots of shredded cheese and bake at 350 for 10 minutes until cheese melted and starting to brown. Served alongside a big bowl of fruit salad, this is an easy and healthy after school snack OR can be a quick and easy dinner for those weeknight when you just don’t have the time.
