Are you trying to use up any leftover ham but just can’t stomach another night of leftovers in the microwave? We have two easy ones you can use up any leftover holiday ham without even touching the microwave. They both are very different recipes in terms of taste and texture but are similar in that they are super easy AND were enjoyed by all our kid testers! So if you were about to go grab that bag of split peas from the pantry for lack of anything else to do with all that ham, try these two out for a change!
HAM & PASTA AU GRATIN: (pictured above)
Don’t let the name fool you-we made this one with skim milk, low fat cheese, and just a bit of half & half. Serve it with a simple side veggie (we used cauliflower) or a crisp salad and you have a delicious and easy dinner! My kids love this dinner!
2 cups elbow pasta
1 tbsp butter
1 onion, chopped
1/3 cup flour
2 cups milk, low fat (we used skim)
1/2 cup half & half
about 1 lb ham, chopped
1 lb frozen or fresh broccoli (chopped or florets) or frozen peas,
1 cup shredded cheddar cheese, low fat
1/2 cup seasoned bread crumbs
Heat oven to 325. Cook pasta per package & drain. In saucepan melt butter on med, add onion, cook for few mins until soft, add flour & stir. Remove from heat. Stir in milk and half & half. Return to heat on med/high & bring to low boil while stirring. Stir for few mins until thickened, set aside. Combine pasta, ham, frozen broccoli (or peas), & cheese in baking dish. Stir in sauce & sprinkle top w/ breadcrumbs. Bake for 20 mins until hot.
EASY HAM STIR FRY:
This is so simple and you can use whatever veggies you have on hand. We used red and green peppers, baby carrots and some chopped cauliflower. We have also used snow peas, frozen peas, and water chestnuts (the kids loved the crunch!). The point is use whatever you have in your crisper that will hold its crunch. You only need to cook this for about 10 minutes and its a great recipe to quickly prep in advance and then when its time for dinner you can just quickly throw it all the in skillet or wok. The kids loved this one too!
olive oil (about 1 tbsp)
2 garlic cloves, sliced or minced
1 red and 1 green bell pepper, chopped
chopped cauliflower (about 1/2 head)
1 cup baby carrots, chopped
2 cups of chopped cooked ham
2 tbsp of soy sauce
2 tbsp rice vinegar
1/3 cup water
1 tbsp corn starch
1 tbsp honey (or use brown sugar)
Heat oil in large skillet or wok. Add garlic and cook for 2 to 3 minutes until golden. Add chopped veggies and cook for 5 to 8 minutes until just starting to get soft. While veggies are cooking, make sauce by combining soy sauce, rice vinegar, corn starch, honey, and water in small bowl. Combine well with fork or whisk. Add sauce and chopped ham to skillet and stir through. Cook for about 5 minutes more on low/medium heat until heated through. Easy!
